I'd be surprised if you had any problems in terms of function or regs, think it's more of a looks thing. I've heard that PVC piping isn't ideal for systems that are under constant pressure, but as far as I know there's no reason why a mostly pvc pipe system *needs* to have copper piping for it's visible sections.
To start with your best bet would be to have a chat with the installing plumber, see if he has a (plausible sounding) reason for having used plastic when he originally told you he'd be using copper for those sections.
